in the Nrotheast they speak Mandarin, in Shenzhen they speak Guangdong hua I thought, most places people will speak Mandarin b/c that is what they learn in school, but there are 100’s of thousands of dialects

Everywhere is the answer. Cantonese is only very southern (the old Canton) but learning mandarin is compulsory there now so everyone can communicate in mandarin.
